Our chef-owner

Grain Goddess Patisserie is the brainchild of pastry chef Nicole Thurston. Chef Nicole received training in classical French pastry at the Seattle Culinary Academy and has been a professional baker and pastry chef since 2017. Her time in Seattle includes working as the head pastry chef for a two-time James Beard award winning restaurant group. She also has over a decade of experience working in weddings and special events as a caterer and event planner in northern Arizona. Nicole was born and raised in Flagstaff.

Our history

As a child, Nicole learned the joy of baking from her mother Julie, a watercolor artist. At 18, Nicole was dreaming of culinary school, but ended up attending NAU instead. In 2017, Nicole left Arizona to fulfill that long-held dream of attending culinary school and decided to enroll in the pastry program. At the time, she had half-baked plans to one day return to Flagstaff and start a cake business. These finally came to fruition in 2024 with the founding of Grain Goddess Patisserie
